Raw Pasta and Shiitake Mushrooms with Hearty Tomato-Avocado Cream Sauce
Ahhhh - another scrumptious dinner born out of an attempt to see how quickly I could use up everything in the fridge before leaving town for a weekend of kids’ yoga teacher training. Ended up with one of the best dishes I’ve made in a while, IMHO.
Pictured here with the shiitakes are raw carrot and zucchini strips, but you could use any spiralized vegetable, kelp noodles, or a cooked pasta.
for the sauce, I used:
two large, firm tomatoes
1/2 cup carrots, chopped
1/3 cup zuccinni, chopped (your sauce will be a nicer colour if you peel the zuccinni first, but not necessary)
1/2 large avocado
the juice of one fresh lime
cayenne, to taste
Blend everything in a high-speed blender. Yields around 1 1/2 to 2 cups.
